Dark Chocolate Covered, Cinnamon Raisin Granola Bars


There really isn’t much to say about these bars other than they’re awesome. Really. They are soft yet the nuts, seeds and chocolate provide a wonderful crunchiness to them! They are loaded with protein, omega 3’s, fiber, natural glucose, vitamins and minerals and thanks to the dark chocolate, high levels of antioxidants.  Yes, dark chocolate is nutritious and full of health benefits! So these are simply one of my favorites – I hope you love them as much as I do! Enjoy!


Dark Chocolate Covered, Cinnamon Raisin Granola Bars

  • 1/2 C. Grassfed butter
  • 1/2 C. processed organic Medjool dates
  • 1/2 C. homemade cinnamon raisin peanut butter (or your natural peanut butter of choice)
  • 1/2 C. raw honey
  • 3 C. oats
  • 1 C. granola with pumpkin seeds (or add 1/4 C. pumpkin seeds if your granola is plain)
  • 2 TBSP chia seeds
  • 1/2 C. raisins
  • 1/2 C. peanuts, plus another 1/4 cup chopped for the top
  • 2 – 72% or more Cacao dark chocolate bars

Step 1.
Line a 9 x 13 baking dish with parchment paper and set aside.

Step 2.
Combine first four ingredients in medium pot on stove on medium-low heat.

Step 3.

While waiting for ingredients in pot to bubble, combine the oats, granola, chia seeds, raisins and peanuts together in a separate bowl.  

Step 4.
Once the mixture begins to bubble, turn the burner off, add in the combined dry ingredients and mix well.

Step 5.
Spread mixture in baking dish and press down evenly and firmly.

Step 6.

Melt both bars of dark chocolate in a microwave safe bowl. Pour the melted chocolate over the prepared bars and carefully spread with a spatula so it covers completely. Sprinkle chopped peanuts on top. Refrigerate for approximately 2 hours.

Step 7. 
Remove from refrigerator and cut into bars. I usually place bars in snack-size baggies for an easy grab-and-go  snack or breakfast on the run!
